Cut the carrots and celery stalks in half and place them in the bottom of an oven-safe dish. Place the bunch of parsley into the cavity of the chicken. Place the butter under the skin on the top of the chicken between the two breasts. Sprinkle the chicken with fresh ground black pepper. Sit the chicken on top of the carrots and celery and bake in the oven for 20 minutes uncovered.
